Cheap eats!

Yesterday before heading to work, I put a whole chicken (purchased for .49 a lb for 2.5 lbs) in the slow cooker. I seasoned it heavily with Cook's Choice Brisket Seasoning, wrapped it tightly in foil, and set it to Low. My other half didn't take it out until about 8 PM so it cooked about 6 hours. It was very moist and flavorful and dipped in Country Bob's Sauce it was especially good!

Today before heading to work I used some of the chicken to make quesadillas. I took 3 with me but ate only 1/2 of one so there's plenty in the breakroom fridge for tomorrow if I need it. Presuming no one else gets to it!

And tonight when I got in I used some of the chicken in chicken salad. So, that chicken has provided 2 meals for two people and 2 meals for 1 person and there's still enough left to feed us both at least one more meal.

That's some cheap eatin'! And its a good thing we love chicken like we do.

    Hmm! I've read about the tin foil method, but have yet to try it out. I think I will give that a try!

    Someone told me that would help the chicken have a slightly crispier skin but it hasn't yet. It does keep it very moist and tender, though. Smile

    I think I might give this a try! I am a big user of the crock pot, but usually chili or stew.

    Denise, if you guys can eat potatoes w/your dietary needs, I just slop some foil on top of whatever I'm potting in the crock and fork puncture potatoes enough for us and just lay them in there for a baked potato to serve w/whatever's cooking underneath. Easy and saves the annoying twist and shout cooking of a microwaved bpot.

    one of my fav whole chicken crockpot recipes is to top with a fel slices of butter and sprinkle with curry. Turns out yummy every time! Never tried foil before...I think I will give it a try next time! Thanks for the hint!!

    LL, we do eat potatoes now and then but not often and I do make them in the slow cooker now and then. They're yummy that way!

    Ray, if I liked curry I'd try that. But curry is one of those foods that I just can't stomach most of the time though I did like the curry ketchup in Germany. I do like to grow curry plants, though. Wink
