A nice dinner for almost nothing and a little more money coming in

October 11th, 2007 at 03:11 am

A friend of mine wanted to go out for dinner so we went out and had Tex Mex and she paid. I left the tip but that was only $4 and that's all I spent today so it was a frugal day.

I couldn't pay the electric bill because I hadn't received the paper bill yet and that's required to pay it at one of the local stores. But I got the bill in the mail today so I'll go tend to that tomorrow.

I did some more online work today and made another $20 or so. Not big money but it all helps so I won't say no to it. It goes into the regular checking account to help with the bills in November.

I've been managing to save about 10% of everything that comes in and while it isn't anything to brag about I do have a little cash saved. It's nice to know I have that. Apparently I'm a slow learner but I am learning. Smile

Fall is MIA.. really, it must be

October 10th, 2007 at 03:43 am

But according to weather underground (http://www.wunderground.com/) by the end of this month we should be averaging temps in the low 70s. Oh please, please, come a little sooner! I miss Fall! Not that we really have much of one here - it goes from green to brown to dead, basically, but the cooler weather means no need to run the AC and possibly not even the fans and that means a lower electric bill.

Of course, on the tail of that is winter and that means trying to stay warm and a higher electric bill. But hey, it isn't so bad in Texas. We can put off using the heat for quite a while and enjoy those lower bills.

But really, I want Fall.. now, please!

Two no spend days and online earnings to boot!

October 10th, 2007 at 02:43 am

Today is another no spend day for me. That makes two in a row! That's a rare thing for me but I'm thrilled about it.

I earned some more money online today. Not a lot but I should get a check for about $100 in a few days and it goes into the bank.

Tonight I used the last of the leftover beef roast to make a nice pot of beef and vegetable soup. I didn't make a huge pot but enough for me to have several meals this week from it.

Tomorrow I'm going to pay the electric bill and run an errand or two so it won't be a no spend day. But hey, it was nice to have two of them in a row.

Not at all money related but...

October 9th, 2007 at 05:26 am

wow, that Cowboys/Bills game was something! That's one of the weirdest and best Cowboys games I've ever seen and I'm surprised I have any finger nails left! I was on the edge of my seat the last quarter and I didn't even bet on the game. Wink

Another no spend day!

October 9th, 2007 at 02:20 am

Well, today is another no spend day for me. Woohooo! I do love 'em!

I made the Chocolate Snickerdoodle Coffee Mix earlier and had a cup or two of it. It's too warm to drink it often but when it cools off that will make a great cup of coffee to help stay warm.

I had my breakfast sandwich for dinner with half an apple. It was very good and filling. The other apple half I'll probably have in the morning or with my lunch tomorrow.

I did a little online work today and earned about $5. Not a lot but it will go into savings when I get it. Every little bit helps. If I can do more later tonight, I will, but right now I'm watching the Cowboys/Bills game.

I guess that's all my excitement for the day. Tomorrow should be another no spend day but I really need to get to the storage unit and if I do, I might stop by the CVS on the way to get a couple of small things I need.

Yummy Chocolate Snickerdoodle Coffee Mix

October 8th, 2007 at 10:32 pm

I made this today and oh man, is it good! It's still too hot to drink it regularly but it will be good this winter.

Chocolate Snickerdoodle Coffee Mix

Makes 1 1/2 cups

1/2 cup sugar (I used 12 packets of Splenda and it's too sweet - will use less next time)
1/2 cup powdered milk
1/4 cup non-dairy powdered coffee creamer
1/4 cup cocoa
3 T. instant coffee granules (I want it to taste like coffee and might use more next time)
dash of nutmeg
dash of cloves
1/2 tsp teaspoon ground cinnamon

Combine all the ingredients together and store in airtight containers.
To serve: add 3 Tablespoon coffee mix to 3/4 cup boiling water; stir to dissolve.

Supper menus for the next week

October 8th, 2007 at 02:26 pm

Tonight I'll have a homemade egg, turkey ham, and cheese sandwich on a reduced carb english muffin. Then, for the next week, I'll use food I have so I don't need to do more shopping. I'll have, in no particular order:

Chicken Fajitas with a side salad

Scrambled eggs with a thin slice of turkey ham and one slice of whole wheat toast

Roast beef hash served with green beans and spinach

Chef salad made with roast beef, chicken fajita meat, and turkey ham

Tuna salad rolled up in leaf lettuce and served with a salad

Veggie meal which will more than likely be steamed cabbage, carrots, green beans and spinach

Homemade beef and vegetable soup with a salad and a slice of buttered whole wheat bread

Those are all frugal meals and most will be planned overs or left overs. Yaay for 'used food'. Smile

My bill envelope

October 7th, 2007 at 04:33 pm

I don't use a multiple envelope system where there's one envelope for each bill that's coming due but I use a single envelope system. It's a bank envelope and the amounts due are written in list form on one side of it. Once the entire amount for that bill is in the envelope, I check it off. I can easily look at the envelope and see how much is in it, how much I still need to get, etc. But it's a new system for me and this is my first month using it.

Right now there are no unchecked items and it's only October 7th! I just put in enough money to pay the storage and electric bills. The electric bill isn't due until the 24th but I'm going to pay it early this week.

Wow, it feels great to have all bills paid or the money for them set aside so early in the month.

The system I'm using seems to be working.

Go, Denise! Wink

A very pleasant surprise!

October 6th, 2007 at 10:46 pm

I checked my electricity account online and got a great surprise. The amount I owe is $72.06 and not close to $150 like I suspected I'd owe. Since this is the first full month and the first electric bill which was for 9 days was almost $40 I just knew it would be between $120 and $150. I'd figured my average daily kWh as 22 but the bill shows it to be 20. What a pleasant surprise to get a utility bill that's actually about half of what I thought it would be! I've tried not to use the AC much but I'm really not sure how it worked out this way. But hey, I'm not complaining.

And I managed to keep the kWh at 20 or less which has been a goal.

Yaaay, go me!

When I think I'm poor...

October 6th, 2007 at 05:30 pm

or get the inkling that I might be, I'm going to go back to this website and get a reminder of how rich I really am:

http://www.globalrichlist.com/

According to it, I'm the 708,428,706th richest person in the world. And to think I never knew. Wink

Funny thing is, even though I've been literally destitute in my life, I don't remember ever actually feeling poor. I wonder why...

Yuck! I had to spend money today!

October 6th, 2007 at 05:14 am

I had to spend money today, money I hadn't planned on. I have a Mac Mini and a beautiful ultrathin keyboard shown here:

http://www.apple.com/keyboard/

I cleaned the keyboard this morning and couldn't get all the keys to work afterwards, although I didn't douse it with anything. I tried letting it dry in front of a fan but that didn't help so I went to a local place to get a new keyboard. None of them had USB ports and since I thought the cord on my Mighty Mouse was too short to reach the back of the Mini, I got a new mouse, too.

When I got home I found out the keyboard works fine with my system but the mouse doesn't. Fortunately, the Mighty Mouse cord is long enough so I'll return the other mouse next week. I'm also going to ship my Apple keyboard to my son in Austin and he'll take it to the Apple Store for repair or replacement and ship it back to me.

The total for the new keyboard and mouse is $37.64 but when I return the mouse I'll get about $16 of that back. I'll keep the keyboard - it's nice to have a back up, just in case!

But I sure miss that sexy Apple keyboard..and my $37.64!

On my way home from the store I stopped at BK and spent about $3 on a double cheeseburger and fries. I don't eat that way often but I was very hungry and it was very good!

So, I spent a little over $40 today. Ugh...

One tired puppy!

October 5th, 2007 at 02:50 am

I got to the house I was to clean at about 11:30 after a very fitful night of not sleeping. The back door wasn't unlocked and there was no key to be found. I called the client and he had someone come let me in. So, I got in and started working. I thought it would take about 3 hours to clean but it took 4 and 1/2 hours. There were messes that I wasn't aware of but I managed it. Pay wise, it works out to a little over $13 an hour. It's hard around here to make that kind of money, especially if you're 'undegreed and uneducated' so I think I did well.

The client just called me and told me he was very pleased with the house and that it smells good. That made me feel nice! "Make it smell good" was his big request for the day so I succeeded!

But I am one tired girl! My back hurts, my feet hurt, and my head hurts. I was hungry when I got home but so tired all I could do was open a can of vegetable beef soup and eat it right from the can, no water and no heating. Now that's pretty tired!

Anyway, I survived and I hope he ends up being a regular or semi-regular client. Of course, if he does, it shouldn't take that long each time. I think I could do it monthly in 3 hours. That would be great!

And the best part is I have 60 more dollars to add to the bill envelope. Smile

Cash on hand

October 4th, 2007 at 05:55 am

Right now I have $17.48 on hand and $15 of that is spoken for. Wooohoooo! I won't get too far on $2.48!

But my bills are paid for this month, other than electricity and storage, neither of which is due yet, I have enough food to last a couple of weeks, and I have a full tank of gas in my car. I also have a house to clean tomorrow and will get $60 for that but it all goes into the bill envelope.

Oh well, I'm set for at least another week and a half to two weeks so all is well. It's just kind of sad to only have $2.48 in my pocket...maybe I need to run a coin rescue like baselle does!

A little spending today but not much

October 4th, 2007 at 02:11 am

I cleaned my mother's house today and she insisted on giving me money. I tell her taking money from the woman who cleaned me and my room and raised me and fed me and clothed me just seems wrong on so many levels but she insisted and wouldn't take no for an answer. So, I finally talked her down to $25. I had a minor errand to run when I was finished cleaning her house and spent $10 of what she gave me so I still have $15.

$5 goes to savings and $10 goes into the 'bill envelope'.

Tomorrow I have another house to clean, but not for family. I should make about $60 and it all goes towards bills.

Oh, for goodness sake!

October 3rd, 2007 at 02:08 pm

I read this and almost got ill:

http://www.reuters.com/article/businessNews/idUSN3039306620071001?feedType=RSS&feedName=businessNews

It comes earlier every year..and that's all I'm gonna say about that. (said in best Forrest Gump voice)

I just love no spend days!

October 3rd, 2007 at 05:32 am

Here's my spending for October so far. I included what was spent on September 30 since most of it was for things to be consumed in October.

9/30

Valero - $13.00 (gasoline)
Albertson's - $43.56 (food for at least two weeks)
Wal-Mart $ - 16.37 (clothes line, clothes pins, cat food, light bulbs, instant coffee)

10/1

Food Fast - $3.00 (snacks while out with Mom)

10/2

$0 Yipeeee, a no spend day for me.

I want to see more of those $0 days!

A very easy and smelly gift to make!

October 3rd, 2007 at 12:47 am

Smelly in a good way, that is. Smile I'm not a crafty person and this as about as crafty I get. This is a simple and inexpensive thing to make for yourself or others. Kids can even do it with supervision.

I make about half this recipe.

Easy Spicy Potpourri

4 oranges
4 lemons
1/2 c whole cloves
1/2 c whole allspice
10 cinnamon sticks, broken
10 bay leaves, crumbled
8 oz decorated jelly jars with bands lids

Using a vegetable peeler, peel fruit carefully, removing only the peel. Cut or tear into pieces about one inch in size.

Spread peels on paper towel lined pan. Place in preheated oven to 175 degrees F., or set oven to WARM. Dry for 1 1/2 hours, tossing now and then. When dried, peels should be leathery and/or slightly crunchy.

Spread the peels on dry paper towels and let air dry for 24 hours.

Combine with the cloves, allspice, cinnamon, and bay leaves.

Fill jars with the mixture and place lids on. Screw bands on tightly.

Yield: 3 or 4 half pint jars

To use: Remove lid and leave band on for decoration to fragrance a room. Or put one Tbsp into a jar and fill jar with boiling water to release fragrance.

My favorite way to use this is to just add a tsp or two to a small saucepan or kettle of simmering water and let it sit on the stove. Yummy!

Average daily electricity usage

October 2nd, 2007 at 10:27 pm

I was curious how much electricity I'd used since I got my first electric bill (for just 9 days) so I just checked the meter. I've used 562 kwh since that first bill.

My average daily usage on my last statement is 17 kwh. With today's reading and the number of days since the last reading, I can guesstimate that my average daily usage now is almost 22 kwh. Not as good as 17 kwh but it's been really hot and though I've kept AC use down, I have used it here and there. I'm also cooking more than I was the first 9 days I was here. So I can see the increase being reasonable. But I'm using the AC less than I was so I figured it would stay the same or be slightly less. Things that make you go hmmm....

On a website about green technology and tips to reducing electric consumption I found this:

"Monitor your electric usage daily. Chart it, if it helps. Keep a daily eye on it; like one would you were living off-grid. This will keep your focus on conservation. Set a goal for daily kWh usage, achieve it, and then try to go lower. An average American home uses 40 kWh per day. Efficient homes use as little as 14 kWh a day, which includes winter heating (electric heat pump). Some off grid homes as little as 1 kWh a day!"

So, my consumption is right at slightly less than half the average American's and that seems about right considering there's just one person in the household.

Since I want to reduce my electric bill, I'm setting an average daily use goal of 20 kwh or below, starting right now. I don't know if I can do it but hey, it can't hurt to try! If I can get it down to 20, I'm going to try for 18 and see what happens.

Here are a few good links about energy to check:

Find out how much energy is used by common household appliances:

http://www.city.ames.ia.us/ElectricWeb/energyguy/appliances.htm

And here's how to do a home energy audit on your own home:

http://www.city.ames.ia.us/ElectricWeb/selfaudit.htm

And here's a nice heat loss quiz:

http://www.city.ames.ia.us/ElectricWeb/Heat%20Loss%20Quiz.htm

I imagine most of you know about the Energy Guy and others like him but it's still interesting information!

Out of curiosity, what is your household's average daily kwh usage and how many people are in your home?

My pantry

October 2nd, 2007 at 08:32 am

Part of starting over, at least for me, is building my pantry contents. I'm a real believer in keeping a well stocked pantry and it surely keeps me from having to run to the store for one or two things and coming out $50 poorer.

I haven't been too concerned about food partially because I wasn't sure if I need to stock up like I used to and partially because, well... I wasn't in the mood. But now I am in the mood so I just started the process this week.

It's going to take me awhile and without the large pantry room, generous kitchen cupboards and deep freeze, I'll have to be very creative about how and what I buy and how and where I store what I buy.

As of tonight, here's what food is in the house, excluding the contents of the fridge (whole wheat bread, eggs, milk, cheeses, fresh vegetables and fruit, etc):

Non-Perishables

Two 1 lb 9.6 oz bags of powdered milk
Three 1 lb bags of instant potatoes
Two 14 oz bags of farina
Two 30 count family size tea bags
Five pounds regular plain coffee
One lb flavored coffees
7 oz instant coffee
2 boxes taco shells
18 oz can Uncle Buck's Biscuit Mix
One 14 oz box whole grain brown rice
One 7 oz box instant rice
One 6.9 oz box chicken rice mix
One 7.5 oz box quick cooking wild rice
about 10 lb of long cooking white rice
10 lbs various beans
4 lbs various pastas
3 sleeves saltines
10 oz onion soup mix
1 large bag Splenda
1 small box Splenda packets
4 lbs white sugar
68 oz olive oil
Two 28 oz cans Italian green beans
Three 7 oz cans mushrooms
Four 14.5 oz cans stewed tomatoes
Two 14 oz cans diced tomatoes
Three 10 oz cans Ro-tel tomatoes
One 15 oz can chili
One 14.5 oz can carrots
One 14.5 oz can green beans
Two 10.5 oz cans vegetable beef soup
One 16 oz jar Alfredo sauce
Two 16 oz jars mild Salsa
Diet Pepsi
Miscellaneous baking ingredients and spices
Several packages of gravy mix, spaghetti sauce, etc.

Meat & Frozen Goods

Two lbs boneless beef rump roast
Six lbs boneless skinless chicken breasts
2.5 lbs lean ground beef
4 bags frozen vegetables

It's almost depressing to look at this list but hey, I have to start somewhere! Over time I'll get the kitchen stocked as I want it....

A no spend day..well, almost

October 2nd, 2007 at 12:03 am

Today was planned to be a no spend day for me. I wasn't going to leave the house and that means I don't spend money. But my mother had a 'quick' errand to run and wanted me to go along so I did. It just so happens that the place she had to go was very, very near the new Kohl's that just opened. Since neither of us had been in a Kohl's, we had to check it out. We found things we both wanted but I'm happy to say I didn't buy anything at Kohl's. Oh happy day!

However, Mom remembered another errand she needed to run and since it was going to take awhile and we were both famished we stopped at a convenience store for a snack. I spent about $3 but that's it.

We ran the other errand and went home and I will not go out again tonight. Period!

So it was almost a no spend day for me, close anyway.

Dinner tonight is Poor Man's Steak, brussels sprouts and a slice of pumpernickel with butter. I decided to try a different recipe than I usually use for Poor Man's Steak. I used this one today but cut all ingredients by half:

1 pound ground beef
1 cup milk
1 cup cracker crumbs
1/4 teaspoon pepper
1 teaspoon salt
1 small onion, chopped
1 can mushroom soup
1 cup water or milk

Mix all together, except soup and water/milk and shape into a narrow loaf. (I flattened it on a cookie sheet instead) Let sit in refrigerator for at least 8 hours or overnight.

Cut loaf into slices and fry in a skillet on both sides until brown. (I skipped the frying) Put slices in baking dish. Mix 1 can mushroom soup with 1 cup of water or milk and pour over each piece. Bake at 325° 1 hour.

I just love freebies! And cheap stuff, too.

October 1st, 2007 at 03:35 am

Today I went to lunch at Cheddar's with my mother, stepfather, and some of their friends. I didn't have to pay so it was a very nice free lunch and I brought home quite a bit of my Dijon Mushroom Chicken and will have that tomorrow for lunch or supper. That was my first time at Cheddar's and I imagine I'll go back some time.

In yesterday's mail I got 25 coupons for a free bottle of Country Bob's all purpose or spicy hot sauce. I just love that sauce and will buy it when I have no coupons but I'm happy to do as Al asked and get 4 bottles for myself and give away the other 21 bottles. I have no problem spreading the word about such a great sauce! If you haven't tried it, go to countrybobs.com for a coupon for a free bottle of it. Tell 'em Denise sent ya. Wink

I also got a very pretty hand made hot pad from a friend online. It's varying shades of green and looks nice in the kitchen.

And today I finally found a clothes line for inside the house. My back yard, if you can call it that, is too small for a line and I wanted something that would work inside. Today I found a retractable clothes line for less than $7 so I bought it and installed it over the tub. It has shorts drying on it and so far, so good. Anything that helps save me money is a good thing! $7 isn't much to pay to stay out of laundrymat, huh?

And I've now spent all but $6 of the $50 I got for groceries for 2 weeks. But I'm set for boneless skinless chicken breasts, ground beef, frozen vegetables, and coffee. Yaaaaay!

It's been a good couple of days for freebies and cheap stuff. Smile

Some little financial goals for October

September 28th, 2007 at 05:12 pm

There are a few money-related things I need to work on so I've set some goals for myself for the month of October. They are:

1. Learn more about maximizing coupon use via thegrocerygame.com, CVS ECBs, and other methods. I've paid for membership with GG for October, November, and part of December and that should give me plenty of time to decide if I like it and if it's worth the money to me.

2. Keep my grocery spending at or below $125 for the month. Normally I go for $100 but with Thanksgiving approaching I'll need to buy a few things for the family get together.

3. Cook less and make better use of leftovers so little to no food is wasted. It's difficult to cook for one after years of cooking for a horde - or even a few people who eat like a horde!

4. Look for a local part time job.

5. Have at least two no spend days every week.

6. Put aside for savings 10% of all money I bring in.

There are other things I need to work on but if I try to do too many, I won't succeed at any!

Oh, the humanity!

September 28th, 2007 at 02:29 am

Of paying bills, that is. Yes, today was bill paying day.

For most of the last 25 years of my life, bills were rarely paid on time. Yes, there were months when I was flush and they got paid on time or even a tad early but for the most part, it's been a major source of stress for me.

However, I have a new system that involves my mother helping me pay bills. At 45 I really shouldn't need her help but honestly, I have serious math problems and stress-over-money issues and this works for us. We sit together with a cup of coffee or a soft drink and go over the bills then write out the checks, drop them in the mail and go for lunch and just a little bit of shopping. There's a lot of giggling in there, too!

The total for rent, cell phone, and everything but the electric bill since I haven't gotten it yet and the storage unit since I want to move to a smaller one pronto, was $835.95. Ouch! But that includes $150 for spending money for me for two weeks. No, that really isn't all fun money since $50 of it is for groceries and $50 of it is for gas. I don't use $50 worth of gas every two weeks but since I'm looking for a job I might need that much. What I don't use will be put back in the account.

After we got checks made out and mailed we went to a local place for lunch then went to Wal-Mart and Target. I got a few little things I need and spent $19.88 and that included the cost of curtains for the living room. Then I got a couple of things at CVS and spent $8 and some change. I'll wait til Monday or Tuesday to do the grocery shopping since I'm okay on food right now.

Anyway, my bills other than those two are paid, I have money to go grocery shopping and put gas in the car and I feel fairly good about my financial situation. No, it isn't easy and I need to find at least a part time job but wow, it feels absolutely great to have paid the bills before their due dates and to know I only have two more to pay over the next month!

The last couple of months have been hellish but my mom has really been here for me. I'm blessed to have a mother who loves me as she does and tries to help me keep the stress under control. At some point, she'll turn the reins back over to me but not until I tell her I'm ready.

So that's my financial day in a nutshell. Smile

Confessions of a person with really suckie credit...

September 27th, 2007 at 02:45 pm

It all started back in the 80s when my first husband and I got our first credit cards. In the beginning we treated them with great respect, only using them for emergencies and diligently paying them off each month before any payment was due. Before long we were making payments that were more than the minimum but less than what we'd been paying but we paid them on time, faithfully. Then, sometime later, we made only the minimum payments and those would be a day or two late.

Of course, it went downhill from there to the point where all the accounts had been canceled and we owed more than we could pay, even in monthly installments. When we got divorced, nothing about those debts was in the agreement. I don't know if he got notices about those credit cards but I sure did. I paid what I could on them but ended up with several charge offs.

Fast forward to the late 90s. New relationship, different house, and I responded to a credit card offer. Lo and behold, I got the card! In fact, I got two or three for which I applied. (Were they nuts or what?) Apparently I hadn't learned my lesson yet as the same thing happened with those cards. I treated them with great respect at first but that didn't last long.

Eventually, my mother got me a card on one of her accounts and I would use it when I "needed" something and pay it off each August when I got my yearly payment from a lawsuit my first husband and I had been involved in years before. I could sit here and put some of the responsibility on the other half of the 12 year relationship that ended in late July of this year. But I won't. That card was mine and regardless of what he did or didn't do, I wasn't responsible with the card or my mother's trust. And I paid for it, dearly.

Each August I owed a little more than I had the previous August. In truth, the card was often used to pay the electric bill, buy food, and more times than I care to admit, get cash to prevent foreclosure on our home. It was definitely reassuring to know it was there in case of emergency but it was also a crutch and I abused it.

In 2006 I paid almost $6,000 in August. This year it was more than $9,000. After I paid the balance, Mom canceled the card with my wholehearted blessing. I wanted to celebrate after it was done!

My credit is ruined but that's not such a bad thing for me. If I choose to, I can work on improving and rebuilding it.

I do things on a cash basis now and don't have access to any credit cards. Nor do I want access to any. If I can't pay cash for it, I just don't get it.

So, I get a certain amount of cash each month to pay my bills and live on and when it's gone, it's gone. There's no more until the next month. I have money set aside in case of an emergency but getting to it would be deliberately difficult.

Honestly, it's hard at times living this way. I don't like it when I'm out of money for the month and have to make do like I am right now. But I don't know any other way to handle my finances. I have to be fierce with myself about money, almost ruthless. But it's working.

Oh and when I get credit card offers, they immediately go into the trash..unopened.

It is what it is.

Supper menus for the next two weeks

September 27th, 2007 at 04:24 am

I'm stretching what I have to last through this month. Since I have Type 2 Diabetes, I try to keep the carbohydrate intake down and can't fill up on the inexpensive foods like pasta, beans, rice, and potatoes.

I have a 3 and 1/3 lb beef boneless rump roast I bought for $1.99 a lb and it's thawed and ready to go. I find that if I cook the entire roast it doesn't last very long as I'll eat it two or three times a day and snack on it, too.

So rather than cook the entire thing, I'll divide as follows: one third will be thinly sliced and used for pan frying or grilling and will be added to salads and other dishes, one third will be cut into chunks to use for soup, beef "tips", and the remaining third will be cooked as one piece with lots of carrot, potato, and onion. I should get at least 6 meals from that roast but may get 8 or more.

So, here's my basic dinner menu for the next two weeks in no particular order other than tonight's meal. I might change the meals slightly but this is the basic plan and I'll stick to it for the most part.

Wednesday - Thinly sliced boneless rump roast cooked on the George Foreman grill with a little olive oil and generously seasoned with fresh garlic and basil, served with steamed cauliflower.

***Note - I steamed the entire head tonight and thought I'd turned off the burner. I'd actually turned it to high and the pan scorched some but I think the cauliflower is fine. The house sure stinks, though! Have I mentioned how much I detest an electric oven/stove? If not, consider yourself told now. Smile***

Leftover great northern beans and tossed salad.

Tuna salad rolled in leaf lettuce, served with green beans and half a baked sweet potato.

Beef franks with chili, cheese, red bell pepper, and onions.

Sliced turkey ham cooked on the GF grill, scrambled eggs, and pumpernickel bread with butter.

Beef and cheese melt. I just recently had this at a friend's house and it was great! The overall effect is similar to Philly Cheesesteak, one of my favorite things to eat. We made it with beef labeled Carne Picada but I'm going to use thin strips of the boneless rump roast instead since that's what the beef looked and tasted like and that's what I have. Cook the beef with chopped onions and chopped green pepper. Add some garlic and other spices to taste. When the meat and veggies are cooked and tender, throw a handful or so of your choice of shredded cheese on top. Don't stir it - just cover it and let it sit until the cheese is melted. Spoon onto lightly toasted rolls or buns and enjoy! I'm going to add sliced mushrooms and eat it rolled up in a low carb tortilla with a salad on the side. I'll prepare a little extra to use later for beef quesadillas.

Chef salad with a crusty roll.

Oven baked chicken with tossed salad and half a baked sweet potato. I'll bake a whole chicken, de-bone what I don't eat and use it later.

Beef and vegetable soup with a crusty roll.

Beef and chicken quesadillas made with LC tortillas on the GF grill and served with tossed salad.

Poor Man's Steak, brussels sprouts, and pumpernickel bread with butter.

Beef tips and gravy over faux mashed potatoes and served with tossed salad.

Leftover Poor Man's Steak with leftover faux mashed potatoes.

Making a realistic budget

September 26th, 2007 at 06:27 am

So, I've been working on my new budget, trying to come up with a realistic one.

Originally, I'd budgeted $100 a month for food. I'm slightly over that for September and the month isn't over. But the grocery money is gone so I'll make do with what I have for the next six days. And I really do think I can do with $100 a month as long as I'm very careful about what I buy.

I registered at thegrocerygame.com and will see if that helps. Of course, after I registered and paid, I found groceryguide.com which is almost the same but free. Argh! I talked to a few people who have tried both and they all prefer the grocery game. I'll try it for the few weeks I paid for and if I don't like it, it's worth the money to know that.

Most of my expenses are fixed and I'm trying to keep the ones that aren't fixed under control. One of the big concerns I have is paying the electric bill. For nine days in September it was almost $37. Of course, those were nine very hot Texas days!

That doesn't sound too bad until you multiply it by 3 and see that a month of electric usage is about $120. That might not seem like a lot to some people but that's more than I can handle right now so off the AC went and off it's going to stay for some time. Unfortunately, the unit that cools is also the unit that heats so once it's cold, I'll have to use it unless I come up with an alternative. There's always layering clothes and hot coffee, though.

Here's to cooler weather and low grocery spending... may they be with me for awhile. Smile

Long time no post...

September 26th, 2007 at 05:46 am

Well, it's been a long time since I posted an entry here. I could give a hundred reasons why but honestly, I'm not sure why I haven't posted.

Anyway, my life has taken a sudden change...for the better? for the worse? I think it's the former.

I'm now separated and have been since the very end of July. It's a long story I won't go into here but I'm starting over and what an adventure it's been so far! Not all good but it is what it is.

So, here I go on a new journey. I have new goals, new ideas and hope to keep track of them here.

It was supposed to be for supper tonight but..

my other half decided he wanted meat loaf bowls with mashed potatoes and gravy for lunch. So I went into the kitchen and whipped up a pan of 6 meat loaf bowls using the Better Baker Gourmet Bowl Maker from Cook's Choice (www.cookschoice.com). Here's the recipe I used for the meat loaf, which was awesome!

1.5 lbs ground beef
2 eggs
1 package onion soup mix
1/2 cup ketchup
1/4 cup Country Bob's sauce

I mixed up the 5 ingredients and pressed some of it into each of the bowls and baked them at 350 degrees for about 40 minutes. When they were cooled just a tad, I inverted the pan over a large cookie sheet, tapped it on the bottom several times and voila, meat loaf bowls!

While the meat loaves were baking I made gravy but I cheated and did it the easy way. I used 1 package of brown gravy mix, and 1 cup water, mixed together in a saucepan. Once that was hot and starting to bubble, I added one can of cream of chicken soup. Together, they made an excellent gravy!

Each meat loaf bowl was topped with mashed potatoes and a little gravy. DH ate two of them, DSS ate three and I got one.

Here's what the finished product looked like:

I really can't say enough good things about this bowl maker. Cook's Choice makes some of the best kitchen goodies around, in my opinion, and this addition just thrills me.

If you entertain much, this is a great tool for your kitchen. Even if you don't, it's still great! I've made chocolate peanut butter goodies in it, cornbread and enchilada bowls, turkey sausage and egg bowls, and now the meat loaf.

It's all good!

A peek at some of my garden

April 28th, 2007 at 11:00 pm

I took these pictures just a few days ago. Wow, everything is growing so well! We only lost 5 plants, all cucumbers, in the recent late frosts. Other than those, everything is doing just beautifully. Smile

All four planting beds/tables

Tiny Sweet 100 tomatoes, just forming on the vine

Beets, beets, and more beets! I love 'em

Broccoli and beets

Bob helping with the potatoes planted in tires

More tomatoes

Squash plants which now have huge blossoms and squash just starting to turn yellow

And more tomatoes! After all, isn't the growing of tomatoes what a garden is really all about? Wink

Oh yeah, to keep this sort of on a money track, I went to Ace Hardware today and bought a few couplings for an install DH and DSS are doing today. I spent $5.30.

Ugh, 86 degrees outside...

April 28th, 2007 at 10:57 pm

It's 86 outside, 83 in the house. I'm debating turning on the air conditioner. I really want to but it's just the end of April and we can't afford it right now. Of course, it IS 86 degrees. I don't know how long I'll be able to hold off but I'm trying. I really am trying...
