Someone in a Yahoo Group I'm in mentioned that she made Bubble and Squeak recently. I haven't made it in quite awhile but that got me thinking about the dish. I love that stuff and will more than likely make it for dinner one night this week.
So, in light of that, how do YOU make it? The recipe I use is good but I'm always interested in how others prepare dishes.

Lots of bacon GREASE!!! Sliced and peeled potatoes, chopped onion, and fresh garlic in the grease until potatoes are almost done. Pile on shredded cabbage on top, let it wilt, toss in leftover ham at some point and let it get heated in. Add garlic salt, season-all, lemon pepper & salt to taste. I always serve this with pears to kind of cut the grease factor.

He usually serves it with vegetarian toad-in-a-hole. This is vegetarian sausages laid in biscuit dough (EDIT: more like cornbread batter) and baked. Yumm! Dijon mustard is really good on the side, and HP brown sauce (an English condiment).

Ceejay, any I've eaten or read about had potatoes and cabbage and spices, though the forms those take vary. As long as it's got cabbage and the browned bits, and potatoes and meat (no pork!) I'll eat it. And if it doesn't bubble and squeak, that's okay. lol
